Carrot, cake,

  • (1)
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • 2 cups flour
  • (2)
  • 2 cups sugar
  • 1 1/2 cup oil
  • 4 eggs
  • (3)
  • 2 cup finely grated carrots
  • 1 8 oz can crushed pineapple drained
  • 1/2 cup chopped pecans or walnuts
  • 1/4 cup flaked coconut

 

  1. Sift together first 5 ingredients.
  2. Add next 3 blend till smooth.
  3. Fold in final 4 ingredients.
  4. Poor into a lined 9/13" pan ( cup cakes tins also work well )
  5. Bake 350 35 to 45min. 
  6. once cooled serve with cream cheese icing
