14 Carrot Cake
So moist
- (1)
- 2 tsp baking powder
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 2 tsp ground cinnamon
- 1/2 tsp nutmeg
- 2 cups flour
- (2)
- 2 cups sugar
- 1 1/2 cup oil
- 4 eggs
- (3)
- 2 cup finely grated carrots
- 1 8 oz can crushed pineapple drained
- 1/2 cup chopped pecans or walnuts
- 1/4 cup flaked coconut
- Sift together first 5 ingredients.
- Add next 3 blend till smooth.
- Fold in final 4 ingredients.
- Poor into a lined 9/13" pan ( cup cakes tins also work well )
- Bake 350 35 to 45min.
- once cooled serve with cream cheese icing
