Corn Bread
Corn
- 3/4 Cup Yellow Cornmeal
- 1 Cup Flour
- 1/3 Cup W. Sugar
- 3 Teaspoons Baking Powder
- 1/2 Teaspoon Salt
- 1 Cup Milk
- 1 Egg, well beaten
- 2 Tablespoons melted Shortening (OR butter, margarine, or bacon fat)
- Preheat the oven to 425'F.
- Grease an 8inch square cake pan.
- Mix the dry ingredients together in a large bowl.
- Add the wet ingredients and blend well.
- Spoon into pan and bake about 20 minutes.
To make Mexican corn Bread: add 2 Tablespooons diced green chillies, 1 cup cooked or canned corn kernels, 1/2 cup grated cheddar or jack cheese into the batter and mix well.
- It makes 12 muffins if you want to do it that way. (Apr 19, 2019)
