- 1 cup soft shortening
- 2 cups brown sugar (packed)
- 2 eggs
- 1/2 cup cold coffee
- 3 1/2 cups sifted flour
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp nutmeg
- 1 tsp cinnamon
- 2 1/2 cups raisins
- 1 1/4 cups broken nuts (optional)
- Mix shortening, sugar and eggs thorougly.
- Stir in cold coffee.
- Sift together and stir in flour, soda, salt, nutmeg and cinnamon.
- Mix in raisins and nuts.
- Chill at least 1 hour.
- Drop by roudned teaspoonfuls about 2" apart on lightly greased (or parchment papered) baking sheet.
- Bake until set ... just until when touched lighlty with a finger, almost no imprint remains. (Approx 8 - 10 min)
- We normally leave out the nuts. (Oct 1, 2019)
