Pumpkin Cookies
Perfect fall treat!
Cookies:
- 2 ½ cups flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon
- ½ tsp nutmeg
- ½ tsp salt
- 1 ½ cups sugar
- ½ cup margarine
- 1 cup pumpkin purée
- ½ tsp vanilla
- 1 egg
Glaze:
- 1 cup icing sugar
- 1 tsp vanilla
- 1 tbsp margarine
- 1 tbsp milk
- Preheat oven to 350 and line baking sheets.
- Combine flour, baking powder, baking soda, cinnamon, nutmeg and salt.
- Beat sugar, margarine, pumpkin, egg and vanilla in a bowl until smooth.
- Gradually add flour mixture into pumpkin mixture until fully combined.
- Drop onto cookie sheet and bake for 15-18 minutes or until edges are firm.
- For the glaze, combine icing sugar, milk, margarine and vanilla until smooth and drizzle over warm cookies. Let harden before serving.
