Cinnamon Bites
Dough:
- 3/4 cup warm milk (110 degrees)
- 2 1/4 tsp yeast
- 1/4 cup sugar
- 1 egg + 1 egg yolk at room temp.
- 1/4 cup butter, melted
- 3 cups flour + some for dusting
- 3/4 tsp salt
Filling:
- 2/3 cup brown sugar
- 1 1/2 tsp cinnamon
- 1/4 cup softened butter
Glaze:
- 1 1/3 cup powdered sugar
- 2 tbsp milk
- Preheat oven to 350 degrees and line a muffin tin.
- Heat milk until warm but not hot. Transfer to mixer and sprinkle the yeast on top.
- Add sugar, egg, egg yolk and melted butter to the milk and combine.
- Stir in flour and salt with a wooden spoon until dough forms.
- Knead for 8-10 minutes on a floured surface until it forms a slightly sticky ball, transfer to a well-oiled bowl and cover with plastic wrap and a warm towel.
- Let rise for 1 to 1 1/2 hours, or until doubled in size.
- After the dough has risen, cut into 1/2 - 1 inch pieces and roll them into balls.
- Mix brown sugar and cinnamon together and melt butter in a separate bowl.
- Dip dough balls into the butter, then the cinnamon sugar mixture, and arrange evenly in the muffin tin and let sit for 20 minutes.
- Bake for 15-20 minutes or until light golden brown.
- To make the glaze, combine milk and powdered sugar while the bites are cooking and drizzle after they come out of the oven.
- Let cool before serving.
