Sugar Cookies

Cookies:

  • 1 cup (2 sticks) butter, softened
  • 1 1/2 cups granulated sugar
  • 1 egg
  • 2 teaspoons clear vanilla extract
  • 2 3/4 cups all-purpose flour 
  • 1 teaspoon salt

Icing:

  • 1 cup powdered sugar
  • 2 - 3 teaspoons milk (or water)
  • 2 teaspoons corn syrup (optional)
  1. 1/2 teaspoon of your favorite extract

Cookies:

  1. Preheat oven to 350°F. Lightly spray pan or pan cavities with spray.
  2. In large bowl, beat butter and sugar with mixer at medium speed until well blended. 
  3. Beat in egg and extracts. Mix well.
  4. Combine flour and salt, then add to butter mixture. Beat until well blended. 
  5. Press dough into cavities, or shape cookies. 
  6. Bake 9 - 10 minutes or until light brown around edges. Cool in pan 10 minutes.
  7. Cool completely on cooling rack. 
  8. Decorate.

Icing:

  1. Sift powdered sugar into a small bowl.
  2. Add 2 tsp of milk and stir until sugar no longer looks powdery, adding an additional 1/2 tsp milk at a time as necessary.
  3. Add corn syrup (if using) and extract and stir until smooth, adding more extract to taste and more corn syrup to achieve the considtency you want.
