Mint Nanaimo Bars
A holiday favorite
Base:
- 3/4 cup butter, softened
- 1/3 cup white sugar
- 1/2 cup cocoa powder
- 1 1/2 tsp vanilla
- 2 eggs
- 3 cups Graham Wafter crumbs
- 1 1/2 cups coconut
Filling:
- 6 TBSP butter
- 1 package Vanilla Instant Pudding (3.5 oz)
- 1/3 cups milk
- 3 cups sifted icing sugar
- 1 tsp peppermint extract
- green food coloring
Topping:
- 3 TBSP milk
- 1 cup semi-sweet chocolate chips
Base:
- Mix butter, sugar, cocoa, vanilla and eggs in a large bowl until well blended.
- Combine graham crumbs and coconut, then add to chocolate mixture.
- Press firmly and evenly into the bottom of a 9x13x2" pan.
Filling:
- Cream butter. Mix pudding powder with milk, then add to butter along with icing sugar. Beat until it resembles icing.
- Add flavoring and food coloring.
- Spread over base and refrigerate for 15 minutes.
Topping:
- Heat milk and chocolate chips until chocolate melts, stirring until smooth.
- Spread quickly over filling and refrigerate at least 2 hours before serving.
- As you can see from this photo, from December 2018, you might want to go easy on the green coloring! (Dec 20, 2018)
