Mint Nanaimo Bars

Base:

  • 3/4 cup butter, softened
  • 1/3 cup white sugar
  • 1/2 cup cocoa powder
  • 1 1/2 tsp vanilla
  • 2 eggs
  • 3 cups Graham Wafter crumbs
  • 1 1/2 cups coconut

Filling:

  • 6 TBSP butter
  • 1 package Vanilla Instant Pudding (3.5 oz)
  • 1/3 cups milk
  • 3 cups sifted icing sugar
  • 1 tsp peppermint extract
  • green food coloring

Topping:

  • 3 TBSP milk
  • 1 cup semi-sweet chocolate chips

Base:

  1. Mix butter, sugar, cocoa, vanilla and eggs in a large bowl until well blended. 
  2. Combine graham crumbs and coconut, then add to chocolate mixture. 
  3. Press firmly and evenly into the bottom of a 9x13x2" pan.

Filling:

  1. Cream butter. Mix pudding powder with milk, then add to butter along with icing sugar. Beat until it resembles icing.
  2. Add flavoring and food coloring.
  3. Spread over base and refrigerate for 15 minutes.

Topping:

  1. Heat milk and chocolate chips until chocolate melts, stirring until smooth.
  2. Spread quickly over filling and refrigerate at least 2 hours before serving.
