Lemon Loaf

Batter

  • 1/2 cup butter
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 cup all-purpose flour
  • 1/4 cup tsp salt
  • 1 tsp baking powder
  • grated rind of 2 lemons
  • 1/2 cup buttermilk
  • juice from 1/2 lemon

Topping

  • juice from 1 & 1/2 lemons
  • 1/4 cup sugar
  1. Grease loaf pan and preheat oven to 350°F.
  2. Cream the butter and 1 cup of sugar until light and fluffy. Add the eggs, one at a time, beating well until fluffy.
  3. Combine the flour, baking powder, salt and lemon rind, then add to egg/butter mixture and mix briefly.
  4. Add the buttermilk and lemon juice (from half a lemon) and beat just until well blended. 
  5. Pour into loaf pan and bake for 50 - 60 minutes, or until the top is golden brown.
  6. While the loaf is baking, combine the topping ingredients - the juice from 1 1/2 lemons and 1/4 cup sugar - and heat just until the sugar has dissolved.
  7. When the loaf has finished baking, remove it from the oven and pour the lemon juice and sugar topping mixture over the top. Let cool for 10 minutes then remove from the pan. Let cool completely before slicing.
  1. If you don't have buttermilk, mix 1.5 tsp of vinegar or lemon juice with enough milk to equal 1/2 cup liquid in total. Let sit for 5 minutes before using. (Sep 12, 2005)
