Flank Steak
Basic technique for cooking flank steak in the oven.
- 1 (2-4 lb.) flank steak
- 1 TB. olive oil
- 1 TB. brown sugar
- 1 TB. paprika
- 1 tsp. salt
- 1 tsp. ground allspice
- 1/2 tsp. onion powder
- 1/2 tsp ground cumin
- 1/2 tsp. ground nutmeg
1. Preheat oven to 500 degrees.
2. Place the flank steak on a broiler pan, or foil lined pan with a rack on top. Rub it down with olive oil, or marinate for 3 - 24 hours in advance. Season as desired.
3. Broil for 4 - 6 minutes, then flip and repeat.
4. Remove from oven and let rest 5 to 10 minutes before slicing (against the grain*) and serving.
* most steaks are longer than they are wide, so against the grain normally means that you should slice across the narrow end of the steak.
