Grilled Sweet and Sour Chicken Packets

  • 4 boneless chicken breast halves
  • 1/2 cup sweet and sour sauce
  • 1 can pineapple chunks, drained
  • 1 medium bell pepper, cut in strips
  • 1/4 small onion, cut into strips
  • 1/2 cup chow mein noodles or rice
  1. Heat the BBQ. Cut four 18 x 12" pieces of aluminum foil. Spray with cooking spray to prevent sticking. 
  2. Place 1 chicken breast on each foil piece. Top each with 1 TBSP of sweet and sour sauce, and 1/4 of the pineapple, bell pepper and onion.  Top with the remaining sauce, divided between the four servings.
  3. Fold foil over the chicken and vegetables, sealing the edges but allowing space inside for circulation and expansion.
  4. Cover and grill packets 4 - 5" from medium heat for 12 - 18 minutes.
  5. Cut a large x across the top of the packet and serve on/beside noodles or rice.
